Bob's Red Mill Almond Meal/Flour is skinless, blanched almonds that have been finely ground. It lends a moist texture and rich, buttery flavor to low carb cakes, cookies, muffins, sweet breads and a host of other low carb desserts. It is also superb as a breading for meats and vegetables. It does have a good bit of healthy fat (oil). One fourth cup is 28g (14g fat, 6g protein, 6g carbs (3g dietary fiber). I don't eat fat except in fish and nuts and I take EFA's in several ways.
