    * These are fine muffin mixes! BUT - they are very bland. I buy them for my husband, primarily, who is on a low carb diet as a result of diabetes. I modify the recipe only slightly and end up with a very tasty muffin! As these muffins end up being around 1 carb serving, my modifications make them slightly over 1 carb serving. I add 8 packets of Equal to the mix, and about 1/4 cup of walnuts for more texture! I do not use sour cream - I use IMO, and I do not use butter - I use Enola. On the Apple Cinnamon muffins, I add a peeled & chopped half an apple. On the Cranberry Orange, I add 1/4 cup of whole cranberries, cut in half. My hubby loves these - and they are a perfect snack to help keep his blood sugars level. It's hard to find low-carb mixes like this any more - store managers think the low-carb diet was "just a fad", and now it's gone. With the obesity epidemic in this country - maybe they'll rethink this idea - if they get smarter!

    * First of all, my main reason for giving a "3" is because although some of the mixes are good, the statements on the product are deceptive/incorrect. My husband is borderline diabetic, so I have been cooking low carb for him. However, we do not eat artificial sweeteners. The online description for these muffins says "ALL NATURAL, NO ARTIFICIAL INGREDIENTS" (BIG reason I bought them!) and the actual package says "NO ARTIFICIAL INGREDIENTS"...yet after making a batch of the carrot muffins, I noticed a horrid smell from them (I have severe chemical sensitivity). I tore off a small piece to try it and was overwhelmed by the horrible taste! Even my husband, who eats anything, thought they were awful and had a BAD taste. He hurried to rinse his mouth out, and I ended up getting ill from the chemicals. Well, I read the ingredients and there it is...SUCRALOSE, aka Splenda. In no way is sucralose NATURAL. It's a lab made chemical,and therefore ARTIFICIAL, so how can they claim no artificial ingredients??? I will now read each and every package before buying...I had only read the first two bags before ordering and they had NO sucralose. On to our reviews of flavors:

    All of the muffins ARE bland and have little sweetness and are lacking much flavor (just hints), but he likes them as a change up from the usual eggs & meat.

    Bannana Nut: So far his favorite and mine. Not much banana flavor, but still good. In the future, I may add a 1/4 of a banana and small amount of additional nuts to offset additional sugar.

    Blueberry Creme: Again, no blueberry flavor or much sweetness...like barely sweetened cake. Will add a handful of blueberries in the future.

    Cinnamon Streusel: Barely sweet & bland. Will add more cinnamon (good for diabetes) and maybe some other spices (nutmeg, ginger), pecans and maybe a little chopped apple.

    Carrot: See First part of review. JUST AWFUL & INEDIBLE.

    In summary, these are pretty good muffins in general, especially if you can "doctor" them up per your taste & allowances.

    *****The company (if they read this) needs to change their wording on here and some packages. Sucralose is NOT NATURAL...it is a lab created, artificial sweetener. These false statements ended up costing us wasted money and gave me a rough few of hours recovery.*****

    * These muffins tasted very good and were easy to make. My daughter and my husband loved them and he's not watching his carbs. I bought more the same day. You need to let them sit for a while after they are finished baking.

    * When doing this review, first, I reminded myself that these are low carb muffins, and not ones that are high in fat and high in carbs. After doing that, I had to give them a rating of 5. I have had other low carb treats that often taste dry and like cardboard. These carrot muffins were moist and tasty. In addition, they are very quick and easy to make. This makes it easy to whip them up in no time - especially when you want something good to eat and feel that you might "fall off the wagon" and eat something you shouldn't.

    I took a small amount of cream cheese and mixed it with some Splenda. I spread this on the muffins and it tasted just like cream cheese frosting. Both my husband and I loved them and will order them again. Highly recommended.

    * This is my favorite muffin. It's actually like eating a chocolate cupcake. I add about a heaping 1/4 cup s.f. chocolate chips (they can be purchased here), a packet of Splenda, some salt, and substitute about 1/4 cup of the liquid with Da Vinci's s.f. Chocolate syrup. Also, you can substitute yogurt for sour cream as called for in the recipe. Use the entire bag, use paper muffin cups, freeze what you don't eat and simply warm the remainder in the microwave. If you desire icing, Sweet N Low sells s.f. chocolate icing.

    * Heaven! I had thought I'd never have cornbread again! Devastating. I am originally from the southeastern part of the US and cornbread is integral to many meals. You can't even have stuffing with your turkey! But now I can have cornbread and cornbread stuffing with poultry. Thank you Dixie Diner! Definitely 5 star

    * I have tried 3 of the muffin mixes, all great. However, the classic carrot is the best!! If you like coconut flavor, then these are for you. More coconut than carrot, but taste wise is perfect. I have no guilt eating these. I make no changes or additions and they are perfect.

    * I agree these muffin mixes are bland. But as with Mary's situation, you have to make the most of what you have. As such, these mixes are invaluable. What is lacking besides fresh flavor is salt. You just have to experiment with how much salt you care to add. For corn muffins - a great side for veg. chile or fish, add 1 or 2 tablespoons finely minced fresh scallions stalks, OR chives OR regular onions. One packet of Splenda, some salt, at least a tsp. or 2 of your fav.oil. Do the entire packet at once. Freeze remainder. To reuse, thaw, slice in half, add margarine or garlic margarine on the top, and toast under the broiler. For diabetics or anyone concerned with sugar intake, don't forget the sugarfree jams! A tad of s.f. Orange Marmalade could be added in place of Splenda for Cranberry Orange muffins, and so forth. Also, don't forget s.f. flavorings like DaVinci to add some flavor when a recipe calls for liquid. Also, Egg Beaters can be sub'd for eggs.

    * The Blueberry Cream muffin mix is good, but these aren't your mama's muffins. I like them, but my children think they taste "funny". I've tried making muffins using soy flour, and even Carbquik, and these are way better. They are moister than ones I made using carbquik, and I think they are pretty good for a low carb product. They are moist muffins and I do enjoy eating them for breakfast!

    * I'm going to keep this short: This product is wonderful. I used the muffin mix to make corn bread in an 8x8 in pan (instead of a 9x9 as recommended on the package) and baked it for 20 minutes as directed. The result was corn bread that was almost identical to my grandmother's unsweetened "Yankee Corn Bread" recipe. The texture is good and the taste of corn is pronounced. I can't wait to use leftovers to make cornbread dressing!

    * These muffins are fantastic! My favorites so far are the chocolate choc chip and the banana nut. I add extra banana extract for added flavor. The cinnamon is good but maybe needs a bit more sweetness. I add cinnamon extract to those as well. I eat them after heating (or defrosting) in the microwave. I cut them in half, put a couple of thin slices of butter on each half, then heat. I eat one on the go for breakfast or as a snack at night. They are just filling enough. I always make 2 flavors so that I have variety. Trying the coconut and the almond next. I'd love to have a chocolate chip muffin like Atkins used to have in a muffin mix!

    * This muffin mix is heaven for diabetics, and like most reviewers I've found a few simple ways to make it even better. Replace the water with DaVinci sugar-free chocolate syrup and add an extra tablespoon of melted butter. Also, I use an 8" x 4" nonstick loaf pan instead of baking 12 tiny muffins. The result is absolutely amazing and good enough for company ... rich, chocolatey and moist. My husband is addicted and he has no idea it's low-carb!

    * Oh man. I am a picky eater and almost every low carb item I have tried has had an aftertaste of some kind. After reading all these reviews I decided to give the choc. choc. chip muffins a try. I made them exactly as the instructions said to and oh my word, DELICIOUS and ABSOLUTELY No aftertaste at all. Truly amazing. I am now ordering some more of these and trying a couple of other flavors as well. I warmed mine up in the micro for a few seconds and put butter on them---yum. yum. yum. My only dilemma was deciding between putting butter on them or whipped cream. Both were equally delicious. Trust me----you will not be disappointed with this mix! Thanks, Dixie!!

    * I prefer the muffin mixes over the bread mixes. I do not make them into muffins but I bake them in a loaf pan. (50 minutes) I find the muffin mix is more moist then the bread mixes of the same flavors. I have used this product for a number of years, its easy to make on the weekend, then take a few slices to work with me for my morning breakfast on weekdays. I have no time to cook during the week day mornings and this is very convenient.

    * The chocolate-chocolate-chip muffins are crazy good! I order them every month! I will say this though: be careful not to breathe in the muffin crumbs!!! Both my son and I choked on the crumbs (even though the muffins are moist) and so now we're just careful how we breathe (notice that we haven't stopped EATING them though LOL!).

    My son now refers to these muffins as "choke muffins," as in "Mom, can I have another choke muffin?"

    * I really like these muffins as a low carb alternative. I have been a little disappointed in the carrot muffins recently. It seems the taste has changed. Maybe it is just my taste buds, but it seems to be different somehow. My favorite are the banana nut muffins. I found the chocolate chocolate chip ones to be a bit dry, but they still taste fine. I did not like the corn muffins but that is just a personal preference. I like "sweet" corn muffins and these are NOT sweet. The carrot muffins are just ok now, but I am hoping they will improve in taste or grow on me. They are so few carbs and very filling. Mine have never been done in the time suggested on the mix - they always take much longer.

    * The coconut muffins are amazing. I cook and freeze them and just take out 1/2 to 1 as I feel the need. I microwave it for 20 sec and then add butter. WOW - so satisfying just when I most need it. It's easily the best weapon in my low carb arsenal!

    * Tried the lemon creme. I added some coconut flour for extra fiber, an extra egg and made it in a loaf pan. It is really good and no weird aftertaste. Turned out like a really moist pound cake. I just do better with slices than muffins but I bet the muffins are really great too. Am back for more and will pick up some other Dixie Diner stuff to try too. Oh and I know this mix did not raise my insulin in any way. It is very good.

    * Love this muffin mix - would have given it a 5, but I normally make a couple modifications before baking. I add a couple tablespoons of extra dark cocoa (net 1 carb per serving) and an extra teaspoon or so of vanilla. This time I'm also trying substituting 1/2 cup of the water with coffee. I wish the muffins were a little bigger or a little less carbs, but overall, very tasty and a nice treat.

    Oh, also, in general, I've found these cook in 16-17 minutes in my oven and if you leave them in much more (instructions say 18-20) they get dried out.

    * Hmmm, there is a slight corn taste...which probably comes from the corn. Go Figure! But, you need to add a helluva lot more oil or something to make it moist. I followed the instructions to the letter and it was like eating dry grits! I suppose it has some potential, but it will take a lot of doctoring. A LOT! For you bakers, it's a good challenge. The flavor isn't bad...it's just so dryyyyyy. Just thinking about it makes me want a big glass of water.

    * The taste of this mix (Golden Vanilla Almond) is really good because the vanilla is just right. The texture was spongy, like a dish sponge that's been in the water. The appearance was...shiny. Be sure to actually follow the directions and grease your muffin pan; I used papers and a lot of the muffin came off when I peeled the paper. On the other hand, I might have lost at least half a carb per serving that way.

    It's a great treat if you judge it on its own merits. Just remember this isn't a Starbucks or bakery muffin, and you won't be disappointed.

    * These muffins are soooooo good. I make a batch on the weekends and put them in the fridge for a low carb breakfast/snack to go. I didn't like the lemon, but the strawberry cream, banana nut, and blueberry are excellent. Like they are the best tasting low carb product I've ever had. The banana nut is especially nice because it has some nice crunch to it. No recipe modifications needed.

    * The Chocolate Chocolate Chip mix was very good! I added 1/3 cup of coffee to the mix just to give it a little mocha flavor and they turned out great. Makes 12 regular size (not jumbo) muffins and they freeze very well. I had my family try one and they all liked them too. Will purchase again and freeze for a quick low carb breakfast for myself. I figured 6 breakfasts (2 muffins each) makes the $7.99 price not too bad.

    * YESSSS! Okay, here's my story. I'm new to this low carb diet thing, I just found this site last week and this was part of my original order. I realize that my weaknesses are pasta, bread, rice and everything else this diet restricts but I want to lose weight and more importantly I want a healthier lifestyle. Back to the muffins, which I'm currently chowing down on, YES! These muffins are absolutely amazing, and not in a low carb but otherwise ehhhh way, seriously, these muffins are better than some I've tasted in the past containing 5-8x the carb count. They're good, point blank period. If I were you I'd try them, as I said I'm chowing down on one now and honestly just logged on to make sure I buy more. I tried the classic carrot but think I'm going to get more and venture out with another flavor.

I cooked them, then sliced them in half horizontally and filled them using whipped cream, and some banana creme pudding jello whipped into whipped cream which goes firm in the fridge. Adds a few more carbs but that's fine if eaten in the morning, as you have the whole day to burn it off. Perfect for break, and no-1 will know its low carb.

    * I just tried the Cinnamon Streusel Swirl muffins. These are wonderful. I did add a few things based on my experience with other mixes. I added a tsp of vanilla and 1/2 tsp of cinnamon to the dough mix and 1/4 tsp of cinnamon to the Streusel packet. I really like cinnamon and it is very good for diabetic blood sugar control. The texture of the muffins is just like that of a regular muffin and the taste was wonderful. I also ended up using two whole eggs instead of 1 egg and 1 egg white like it called for. I got out two eggs and was on autopilot apparently and just put them both in. Worked just fine! I can't wait to try the other flavors.

    * I have been shopping at Netrition for about 3 yrs. - started right after I found out I was pre-diabetic. I buy mainly the low carb products. I am stuck on the Carb Counters Muffin Mix, especially the chocolate chocolate chip. Most of the mixes taste so good, you'll never know they are low carb. In my case, a mix I tried early on was so good, I went to the trash can to dig out the package to verify is was indeed low carb. The muffins are simple to make and I often eat them at breakfast or for an evening snack. They are also great for traveling on shorter trips. They keep well in a plastic bag. This is probably not so good for a long term trip, unless you can refrigerate them.

I make them with applesauce instead of the margarine to keep the calorie content even lower and they come out quite well. It helps to make them in cupcake papers and wait until they are cold in order to have them peel away from the liner better. We've tried five varieties so far. Our current favorites are the chocolate muffins and the banana nut. The Lemon Cream was also very good.

I used the regular recipe and they were moist - with no aftertaste. I have made the lemon pound cake since using the low fat recipe and it was just as good. With both products we had a couple and froze the rest. 20-30 seconds in the microwave and they taste fresh out of the oven.

I topped one half with Jok'n'al's sugar-free lemon curd and the other with The Gracious Gourmet's gingered peach apricot spread. Each muffin only has 53 calories! I am on a low calorie diet (1200 cal/day) and I restrict my carbs too, and these muffins satisfy my sweet tooth. I've made the chocolate chocolate chip muffins before and they were delicious as well!     * I use the breakfast flavor muffin mixes for my husband's Sunday breakfast treats. He really loves the apple cinnamon blueberry and banana nut flavors.

    I generally add a little bit of Splenda to them as he thinks they should be sweeter.

    These work well for his special diet (heart disease and diabetes), and by exercising on his treadmill he is doing well 8 yrs. after being diagnosed with congestive heart failure.

    * My diabetic husband is very picky with food, and it was a headache trying to come up with breakfast meals that are not in the eggs/bacon/sausages mold. So I was surprised when he really liked the muffins. He's been having them for breakfast for the past three months and he hasn't tired of them. Our 10-year-old niece who sometimes visits with us also loves them.

    When I didn't have sour cream around the first time I was going to make them, I substituted 1 cup of cream instead. Since my husband likes it so much, I haven't bothered to try the original recipe yet.

    * Today, I made the chocolate chip muffin mix as a Labor Day treat for my family. Instead of using a muffin tin, I used a bread loaf which in my opinion, made the mix go further. The loaf was really delicious. For me, I thought that it could have been a bit sweeter. But, for a low carb product, I still found it excellent. I highly recommend this as an alternative low carb treat.

    * Made the carrot cake muffins according to the low fat recipe on the back of the package. Added a little extra cinnamon and cloves and topped with Dixie Diners white frosting. The result, for a total of 65 calories a piece was good. Sweet and spicy, although the texture is a little spongy as you expect with 1 1/4 cups of egg substitute in the mix. Made 12 normal sized cupcakes. Will buy again.

These muffins are a really fantastic alternative for breakfast... especially for someone who craves that baked-goods texture! They are truly delicious, and you would never know you're eating low-carb. I've tried a lot of the flavors, and they're all quite good. One note, though!... make sure you remember to have sour cream on hand! You need it for every variety. They freeze well, too!

    * Excellent corn bread. I've made dozens of Dixie's mixes -- some are okay, some are good, some are horrid -- this one's really great. The best of all low carb baked goods I've tried in ten years. Flavor, texture, everything -- this one's got it all. Fortunately, this is less sweet than standard cornbread/muffin mix. If you want it sweet, add your own sweetener. If you don't, don't worry. I made this into cornbread (8x8 pan per instructions); the cooking time was way off. They said 12 minutes; it took about 25 minutes.

This morning I made the cinnamon streusel swirl with unsweetened greek yogurt instead of sour cream and they were DIVINE. Fluffy, light, and buttery. Definitely going to get more greek yogurt on hand now. Every time I make the muffins I always add a few shots of DaVinci sweetener, usually vanilla, chocolate, or white chocolate. Love love love!

    * I've tried most of the Dixie Diner muffin mixes, and for the most part they are outstanding. I'm so grateful that there are products like this.

    I'd have to say that my favorites are the "classic carrot" and "chocolate chocolate chip". In both cases they are about as good tasting as the full-flavored, high calorie, extremely high carb muffins that you find in most bakeries or supermarkets. And this puts them FAR above other low-carb muffin products I've tried.

    My least favorite I'd have to say is the coconut cream. That is too bad because I really like coconut, but for some reason this particular flavor has a bad aftertaste with these muffins. All-in-all though, this is an outstanding product. I've got my cupboard stocked with them :)

    * Virtually anything from Dixie Diner is worth buying, with muffins and cakes tasting like regular! While cooking some give off a little bit of that low-carb odor (soy, I suppose) but they do not taste weird at all. They also stand up to freezing and microwaving well. I mention it because they will mold after a few days (thanks to the lack of sugar) as do many low-carb baked goods. That's why standing up to freezing is so important to me.

    * I bought the carrot mix and corn mix. The carrot mix was way too sweet and tasted really "splenda-ey" with a bad aftertaste. The corn mix was awesome! They baked up very nicely and once they spent the night in the fridge, they tasted pretty much like corn muffins. Not as strong a flavor as real corn muffins but very tasty with butter. Texture was good. I am ordering more and I'm going to experiment with making them into a slightly sweet zucchini muffin with cinnamon. Or maybe a pumpkin muffin!

    * I really miss the Atkins lemon poppyseed muffins, and was looking for a substitute for that occasional muffin craving. I tried the carrot and the banana nut. The carrot was incredible - tasty, spicy, and easy. The banana nut were not quite as good - a little too much coconut, not enough banana taste. Also, the banana muffins took a lot more stuff - sour cream, egg whites, etc. Maybe if I used some of that DaVinci banana syrup instead of water? I sprinkled a little cinnamon on both, and baked it in - yum! Going to buy a case next time....

One suggestion - I make them in muffin top pans (available online), freeze them, and when they are totally cooled, then I can pop them in the toaster at work and they are heavenly.     * This is a great muffin mix! I've only tried the bran muffins, but just ordered almost all the other flavors! I added fresh blackberries to the mix & they were delicious. Baked in my silicone muffin pan with almost no clean-up. Thanks , Dixie Diner !!!!!

    * Flavor and texture, there is real fruit in it! Yum! I used DaVinci's Gingerbread syrup instead of half the water. Excellent, spicy fantastic aroma. Add some chopped pecans too for extra protein and texture. Great breakfast or snack!

    * I think Dixie Diner (Carb Counters) has got it nailed. I have tried the Banana Nut (my favorite so far-closest to the real thing), Chocolate Chocolate Chip (good texture, rich flavor), Cranberry Orange (good, flavorful) and Honey Bran (good) so far. I think they are tasty and make you feel like you are having a real treat. It is nice to have a muffin for a change from eggs and bacon for breakfast. When we are traveling, they are great with coffee on the road. I am buying more.

    * I'm SO happy to have found netrition.com to order my LC foods. Of the muffin mixes, I've tried banana nut, corn, and classic carrot. The carrot has a cross between coconut and spice taste. A little cream cheese with Splenda and you have a nice dessert! The corn is good, but, not as good as the other two. I just ordered the cranberry orange to try. This can be a dangerous site... each time I order, my list gets bigger. SO MANY GOOD FOOD CHOICES. Thanks!!

    * If you are a chocoholic and have been craving on your low carb diet, search no more. The chocolate chocolate chip muffins are amazing. When sliced in half and served with low carb pudding on top, you have a little piece of heaven! Or as someone else has noted, cream cheese with a sugar free sweetener on top is pretty amazing, too. I just made myself hungry for one!

    * This was my first purchase of the muffin mix, I purchased the carrot, blueberry, chocolate and cranberry orange, they were all excellent (added a little Splenda to each, and 1/4 c. chocolate syrup in place of water in the chocolate ones). I will admit I am picky when it comes to bread products and normally do not like the texture of low carb products, but these are very good and I will continue to purchase them. My blood sugars do not suffer when I treat myself, and now I can have treats without the guilt. Thanks Dixie Diner

    * If you make this expecting a genuine cinn streusal muffin you will be disappointed, any Dixie diner muffin tends to come out dry- HOWEVER this time I made this flavor as a loaf cake, slightly underbaked it and cut up same number of portions as muffin recipe. This make each piece much more moist and muffin like, hence much more enjoyable to eat!

    * I tried two flavors, apple cinnamon and golden vanilla almond. Loved the apple cinnamon! I put some cream cheese on them and they were great. On the other hand the almond muffins were not good. They tasted all wrong. Not quite sure how to describe them!! The raw batter was delicious mmmmm but after baking it was not tasty. I will continue to order these in different flavors, though! It's a nice treat for a low carber like me.

    * I have tried many of the flavors and have found them all to be really good: apple cinnamon, banana nut, blueberry cream, classic carrot, coconut cream, cranberry orange. The corn were not my favorite, but definitely not bad. They are very moist and flavorful and as good as any muffin mix you would buy. They do not taste low carb. My only criticism as far as flavor is that they are not sweet enough. I have made it a habit of adding 10 drops of EZ-SWEETZ to every batch and they come out perfect. Also, the package says that they make 12 muffins, but those would be very small. So, I double the amount in each muffin paper and make 6 normal-size muffins. You have to bake a little longer (add about 10 mins.) but they come out perfect every time.

    * love the muffin mixes but I tend to add more Splenda and spices like cinnamon, nutmeg etc. Freeze muffins that you won't be eating quickly, they tend to mold easily. All in all the size is right and the flavor is very good. You can sprinkle brown sugar Splenda on top of muffins before baking giving added flavor and by adding extract flavors really jazz them up.

We've been on and off low carb for 7 years and I can't believe we've survived without this stuff! Chocolate had a kind of chalky taste and feel making us cough and choke from what felt like dust in our lungs but maybe if I took them out like a minute earlier it would have been ok but either way they are all pretty good especially cinnamon!

    * I like to convenience of having a quick muffin mix to make when time is short. They are a tiny bit dry but I will still continue to keep a package or two on hand. I use DaVinci flavored syrups as part of the required liquid when I make these muffins. I frequently add walnuts or pecans. Sometimes I make them in my mini muffin tins and freeze them for quick snacks. Just wish they were a bit more moist. Wouldn't trade that for an increased carb count though. Our favorite is the apple/cinnamon and the chocolate chip.

    * I have tried almost all of the muffin mix flavors. I think the best one is banana nut because it tastes like real fruit and nuts. Apple cinnamon is also really good. I did not think the blueberry ones tasted like real blueberries. The muffins are easy to make and convenient to bring with you anywhere for a snack. I store them in the fridge because when you don't they are only good for a few days (I think its the artificial sugar that makes them go bad faster) I do not like the brownies by this brand. The aftertaste of all of the artificial sugar is overwhelming.

The only complaint I have with this product is that you can really only make a normal, small size muffin. If you try to make less oversized muffins, it is difficult to get the center baked without the outside being overcooked.

    * First of all, I would give the Banana Nut Mix a 4.5. I really liked it right out of the oven. Being low tolerant of sugar and carbs, this is the best alternative for my situation. I made them as instructed, but I replaced the heavy cream or sour cream (I forgot which) with a can of evaporated milk, slightly cold, and it worked really good. I also added ground cinnamon because of how good it is for sugar control and it tasted very good. So good, in fact, that I am ordering more. At almost 5 dollars for 12 it is a little on the expensive side, but for 12 of these muffins I am sold. Been thinking about adding some real bananas for the next batch. Have not tried their other kinds, might just try one different and see how it goes (probably pretty good). I am thinking the Apple Cinnamon might be this time around choice but after reading about the chocolate chip. Who really knows, perhaps both... I must be hungry!     * The muffins taste like air - a little too light for me. I do like something heartier. But the taste is okay and I mix in slivered almonds to give the muffins some substance. I buy them for three reasons 1) they are low-carb; 2) they are fast to make; 3) I can grab two for breakfast and it is a nice break from eggs.

    If you like a very light muffin, these are fine. If you like something with more substance, these are not for you.

    So I improvised and cut up little 2-3" banana nut squares that were in the fridge and cool, dipped them in room temp. coconut oil, then pressed the squares in flaked coconut, then put a slice of banana on the square which gave it the moistness it was missing, then drizzled it with the Madhava Hazelnut Agave Nectar...yumarino! The hazelnut nectar is wicked good. This is a pretty good combo, give it a try.

    I gave the muffin mix a 3, because of the bland taste, but maybe it would have been 4-5 if I used the sour cream? But adding the above ingredients kicked it up to a 5 for me.

    * These muffins baked up nice with a great moist texture and a fabulous smell but to me they had a weird taste to them that I can't place other than to say it tasted a bit like dish soap. I really do not like coconut though and these have nice big coconut flakes and so that could be what I am tasting and it's just my dislike for it that is tainting my opinion! I am going to try another flavor next time based on the great moistness and texture. I topped these with cream cheese frosting and it did make it so I could eat them.

    * Well...the mix did produce muffins...and the texture wasn't a big problem, but the coconut taste was VERY strong in the carrot muffins (and I added fresh carrot and nuts to my batch).

    It was almost overwhelming.

    I'm trying two other flavors that don't have coconut in them and I'll see how that works out...

    * I have only tried the cranberry orange, apple cinnamon, banana nut, and blueberry cream. They were each good in their own right. The only thing I would change is that they were a little more moist, but that is typical of low carb baked items.

    * I had high hopes for this - my first try for a mix - after reading so many reviews. But the 3 of us here who are LCing can't recommend these. I thought they were WAY too strong of coconut(which I like) & I see it's the first ingredient! My husband said "too sweet", and my daughter said "too much nutmeg flavor" (& I agree). Maybe there's another flavor that we'd like better...?

    * Not bad, but hardly delicious. It's nice to be able to find anything like this that is low carb, and they offer a nice variety of flavors. But honestly they don't taste very good. At least the coconut ones have a really bitter aftertaste. It's the only flavor I've tried.

    * I was really disappointed with the corn muffins. They didn't really taste like corn muffins and lacked any type of flavor. They are low carb so I knew they wouldn't be as good as the real thing but these didn't even come close to a regular corn muffin. I have a few other types that I am eager to try based on reviews but I have to give the corn muffin mix the thumbs down!

    * These are not bad, I used to make muffins with a product called Hennmann's (I believe that was the brand) that were delicious but I can no longer find that brand. These are "cakelike" rather than "muffinlike".

    * This is for the Blueberry Cream flavor - It was not very sweet (which I find a downside, but I know others would find it an upside). The texture was great and very satisfying. But I was not a fan of the flavor, after swallowing. It was great when you first take a bite, but the bad aftertaste just grows and grows and grows. I hoped at first that it would go away after the muffins sat overnight, but it sadly did not.

    I'm going to give the Chocolate chocolate chip a try (I bought them at the same time) since I enjoyed the texture of the muffins so much. Hopefully not all flavors have the weird aftertaste that I found with the Blueberry.

    * I hate to write bad reviews, especially for Dixie Diner, whose products I usually enjoy. But these corn muffins were dry (baked at minimum time) and tasteless. I even added some jalapeno cheese to the batter and still they just weren't good. My husband, a certified bread addict on a low-carb diet, forced one down slathered with butter to give it flavor and told me to throw the rest away. I have a couple other flavors to try that I'm hoping are good, but save your money and skip the corn muffins.

    * I've tried (and loved) a number of these Carb Counters Muffin Mixes but I'm sorry to say the Golden Vanilla Almond was a huge disappointment. Because the add-in ingredients, oven temperature and bake time were different than for the other mixes I made sure to follow the package directions perfectly, but the batter overflowed the muffin cups in the oven and burned to a crisp. A total waste of four eggs, a whole stick of butter and a $6.39 mix ... not to mention the fact that I also have to clean my oven! (I'll stick with the Chocolate Chocolate Chip mix. It's amazing.)

    * I hate to be a naysayer here, but I made the carrot muffins and they were inedible. It wasn't the taste--it was nicely spiced. It was the texture. Halfway between rubber and a sponge with flecks of gritty coconut inbetween. Even when I let the batter sit overnight to try to soften the coconut, it was still pretty gritty.

    I've had better low carb muffins--flax muffins, in particular. Even the old Atkins brand were better than these. I really wanted to like these, but with Dixie Diners' club it's pretty much hit or miss.

    * Not only dry as dust, but an absolutely horrible aftertaste. My first (and last) try at low carb cornbread muffins, at least from this company. The batter seemed to be perfect so what a disappointment the first bite was. I choked down another small bite slathered with butter but it didn't help. Still dry and tasteless except for the aftertaste which is undescribable. Save your money.

    * I was so excited to try this product, given the numerous high reviews, but was terribly disappointed. The after-taste was dreadful. I actually threw it away, (and for me, that says a lot). Thankfully, the two Dixie Diner muffin mixes are the only products on Netrition that I've not liked. All other products I've purchased on this website have been tasty and satisfying, including another brand of muffin that they sell. I'll stick to the first muffin product I bought. As they say, "if it ain't broken, don't fix it".

    * I'm pretty forgiving for some of the foods when I'm on the Atkins diet, I know most of the foods aren't great and I can usually eat them anyway, but these carrot muffins were absolutely disgusting!! I even made a cream cheese frosting to try and disguise the taste and yuk! I read another review that said they felt like they were eating a pile of hay, and man did they hit that nail on the head! YUK! Do yourself a huge favor, if you want cornbread, bite the bullet and go buy the real thing.

    * Yuck! This corn bread mix is disgusting! I thought i was eating a sponge. I don't know how anyone in their right mind could think this was good. After I tried a piece of one i threw the others in the sink. Low and behold I picked one up and squeezed one after water had been ran on them and couldn't believe the water it soaked up, and the bread was still intact! So the good side to buying this is if you don't like the way they taste, you can always use them as a sponge! Gotta love the multi use corn bread!

    * Took first bite, tasted like a spoonful of artificial sweetener and nothing like carrot cake. I could smell the artificial sweetener while it was baking. I really wanted to like this muffin mix so I tried a second bite, but couldn't even swallow it down. Threw the entire batch in the garbage. This is the first low carb muffin mix I ever bought, and I can't believe this is even on the market. Due to this I think I will stay away from low carb muffin mixes all together from now on. I will be making my own muffins from scratch.
