A Blend of Nine Vegetable Source Enzymes

Many enzymes on the market today are either created by chemical synthesis or made from animal organs -- hog stomach, bovine pancreas, lamb fore stomach, etc. Plant enzymes, however, are derived from actual plants, cultivated on a plant medium.

Individual animal enzymes work in a narrow pH range and are, usually, only capable of digesting protein or fat. A broad-based plant enzyme supplement has a wider pH range of activity, allowing it to function throughout the entire digestive tract. One unit of activity = amount of enzyme that produces (in 1 min under the specified conditions) a hydrolysate whose absorbance at 275 nm is the same as that of a solution containing 1.10 mcg per ml of tyrosine in 0.00g N hydrochloric acid.

LIPASE
LU (Lipase Unit)
One unit of activity = amount of enzyme that will liberate 1 mcmol of acid (H+) per min from the substrate - UCA (Under the Conditions of the Assay)

AMYLAZE
DU (Destrinizing Unit)
One alpha-amylase unitof activity = amount that will dextrinize soluble starch in the presence of an excess of beta-amylase at the rate of 1g per h at 30 C

MALTASE
DP (degrees of Diastatic Power)
One unit of activity = amount of enzyme (contained in 0.1 ml of a 5% solution of the sample prep) that will produce sufficent reducing sugar to reduce 5 ml of Fehling's solution when sample is incubated with 100 ml of substrate for 1 h at 20 C

CELLULASE
CU (Cellulase activity Unit)
One unit of activity = amount required to reduce the viscosity of 200 g of a 5% solution of specified sodium carboxymethyl cellulose substrate from 400 to 300 cps at 35C +/- 0.1 and pH of 5.0 in 1 h.

GLUCOAMYLASE
AG (AmyloGlucosidase)
One unit of activity = amount of reducing sugars produced by a unit of sample in 1 h under specified conditions. Control conditions include time, temp, pH and concentration.

INVERTASE
IAU (Invertase Activity Unit)
One unit of activity = amount needed to hydrolyze 77% of the sucroese applied UCA. Prepare a standard curve from the values for Activity and Polarization Reading. By interpolation from this, determine the activity of the sample. For every degree above 20C, subtract 0.004 from the activity, for every degree below, add 0.004

PECTINASE
Endo-PGU (Endo-Polgalacturonase)
One unit of activity = amount of enzyme needed to decrease 50% viscosity per min at pH 3.5 and 40C.

LACTASE
LacU (Lactase Unit)
One unit of activity = amount to liberate 1 mgmol of o-nitrophenol per min - UCA

BUCKWHEAT

    HOW ARE THEY PRODUCED
    Two major methods of producing and measuring digestive enzyme activity:

    • USP method - US Pharmacopeia

    • FCC method - Food Chemical Codes - this is the one we use

    ACTIVITY of enzymes is a more accurate method of measuring the potency, because enzymes are living substances. One kg of a dead enzyme would not be of benefit to anybody.

    According to the FCC, there are 3 ways to produce enzymes

    • From animal sources - eg pancreas

    • From chemical reactions

    • Solid state fermentation of the Aspergillus spp, with grains as media. This is the method Udo's Choice uses. The purified live enzymes are then spray dried, and a small amount of maltodextrin is added during the drying process as an anti-caking agent and to prevent the protease from eating the other enzymes, as they are all protein.

    CONVERSION
    Currently there is none between the USP unit and the FCC unit, because they are produced from different sources, using different methods

    SOURCE OF ENZYMES
    From fermentation of Aspergillus spp according to the solid state fermentation method of the FCC (Food Chemicals Codes). Major fermentation media incl rice, soybean meal, barley, and corn.

    SIDE ACTIVITIES
    This blend is made by microscopic fermentation. Aside from the desired activity, the raw extract coming from the fermentation process, contains activities as well. These will vary from batch to batch, because they cannot be standardized. In food grade enzymes, all side activity is removed to maintain purity. In some processes here, additional activity is not desired. In nutritional use enzymes, they are however, and are kept in to maximize the broad spectrum activities characteristic of nutritional enzymes.

    ALLERGIC REACTIONS AND CAUTIONS
    Enzymes are protein compounds, so an allergic reaction is possible. Individuals sensitive to mold, yeast and penicillin may experience nausea or gastric upset. May irritate existing gastro-intestinal ulcers. Do not take with high temperature food or drink, as this may reduce the potency of the enzymes.

    DOSAGE
    One capsule at beginning of meal - good with salad. For heavy meal, take one more capsule half-way through the meal. Safe for children and pregnant women.

    HOW DO THEY WORK:
    Enzymes work within the pH range of 3-9 at body temperature and in the presence of moisture. They work anywhere in the digestive system when conditions are suitable.

    • Start working in the mouth

    • Deactivated in the stomach (except protease) - stomach fluids are usually under 2

    • Once through the stomach and in the digestive tract, the optimum pH range is back and the enzymes will go to work again.

    STORAGE
    Keep under 30C, cool and dry. Do NOT freeze, Keep out of direct sun or moisture.

    What are digestive enzymes?

    Digestive enzymes are catalysts which break down food into its basic components, so our bodies can absorb the nutrients they require to build cells, tissues and organs.

    Where do they come from?

    Digestive enzymes come from two sources: internal and external. Internally, the digestive system secretes the enzymes found in saliva, the stomach, pancreas and intestines. Externally, raw food is the primary source. Nature endows all food with the enzymes required for its digestion. Chewing raw food releases these enzymes, and digestion begins. Our own enzymes assist in this process.

    Why don't we have enough?

    Caffeine, alcohol, illness, pregnancy, stress, severe weather and exercise all take their toll on our enzyme reserves. Our bodies also produce less as we age. But, the main reason we don't digest food well is due to the processed food in our diets. Our diets don't contain as much raw food as they once did, and modern food processing techniques and cooking destroy nearly 100% of the enzymes naturally present in food. Even raw food doesn't contain as many enzymes as it once did, due to environmental factors, depleted soil, and preservation techniques. The body tries to compensate by producing more internal digestive enzymes to make up for the lack of external plant enzymes.

    What can go wrong?

    Enzyme-deficient food puts a burden on the digestive system that it wasn't designed to handle. Incomplete digestion can lead to poor nutrient absorption, fatigue, digestive upset, food allergies and other health conditions. Partially digested food particles escaping from the gut can cause an immune response, flogging the immune system. The body may also "steal" enzymes from the immune system, compromising it even further.
