Erythritol is a polyol (sugar alcohol) which is very popular for use in baking and as a general sweetener in low carb diets. Since Erythritol is 60-70% as sweet as sugar, 1 1/3 cups of Sensato Erythritol will give the equivalent sweetness of 1 cup of sugar. However, most people use Erythritol cup for cup like sugar without noticing a difference in sweetness. Erythritol has no aftertaste but some will notice a "cooling" sensation. Erythritol does not cause gastrointestinal distress like some sugar alcohols.
